I apologize for not being on Blogger for so long. I had surgery, then college and work started...and I just haven't had time to update!
On the day of my surgery, I could not sleep at all. I had to leave for the hospital around 5:30am, and there I was puttering around the kitchen wondering what I could make. I couldn't eat it of course--surgeries have this crazy rule of no eating 8 hours before, but I thought I could treat my mom to a nice breakfast.
Gluten Free Strawberry Cream Cheese Crepes
Servings: 4 crepes
Ingredients:
Crepe:
- 2/3 cup gluten free flour mix (either store bought, or you can use this one--look under ingredients)
- 1/4 tsp. white sugar
- 1/4 tsp. brown sugar
- 1/8 tsp. salt
- 2/3 cup milk
- 1 egg
- sprinkle of cinnamon
- 1/4 tsp. vanilla
Method:
- Combine flour, sugar, salt, cinnamon in a bowl
- Make a well in the center of the flour and add milk, vanilla, and egg. Beat well to combine. It should have a smooth consistency
- Heat a lightly oiled frying pan over med-high heat and pour batter into it. I used approximately 1/4 cup of mixture for each crepe--remember, you want them somewhat thin!
- Cook crepe for about 2 minutes, until bottom is light brown. Loosen it up, turn it over and cook other side.
Filling:
I made up the filling as I went along, so the measurements of things will be an estimate.
Ingredients:
- 1/2 cup strawberries slices
- 1 teaspoon white sugar
- 1/2 cup cream cheese
- 1/2 confectioners sugar
- a dash of lemon juice
- 1/4 teaspoon vanilla
- 1/8 cup milk
Method:
- Melt down cream cheese.
- Add milk, vanilla, sugar and lemon juice in a bowl.
- Stir in the cream cheese.
- Spread on finished crepe and add strawberries
