Gluten Free Thanksgiving Sweet Potatoes

Thanksgiving is upon us and I can't wait to go home for the holidays. Thanksgiving is probably my favorite holiday--time with the family, a lot of good food. Then Christmas music starts to be played at my house, the decorations come out and we spend the rest of the week getting the house "Christmas-ized."

We used to make Sweet Potatoes with the Marshmallows on top. I never liked the taste of sweet potatoes until my aunt introduced marshmallow covered sweet potatoes! For a ten year old, this was quite the sticky yummy treat.

Now however, my mom and I created an equally sweet treat. Pecan and Brown sugar topped sweet potatoes. It's a little sweeter and the pecans had a great crunch. I can eat tons of this stuff and it even acts as my dessert for the days following thanksgiving!

Depending on your serving size, this serves about 6-8.

Gluten Free Sweet Potatoes Dish


  • 3 cups mashed sweet potatoes
  • 1 cup brown sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup lactose free milk
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans


1. Preheat oven to 350.
2. Combine first 6 ingredients.
3. Pour into a buttered 1 1/2 to 2-quart dish.
4. Mix remaining ingredients together and sprinkle over top.
5. Bake at 350° for 30 to 40 minutes, until hot and browned.

You can always prepare this the day before, refrigerate it and then bake it thanksgiving day. I would leave the topping off until youre about to bake it though.

Gluten Free Morning Glory Muffins

So, after getting more news from my doctor, I decided to put aside my homework and stress and just mess around in the kitchen.

So we already knew that I had Celiac, but I am also most likely lactose intolerant and have IBS as well! They gave me a few over the counter meds to try but still want to run a few more tests to make sure I don't have other hidden things.

Anyways, here's a yummy treat for the cold mornings. These muffins are a great breakfast treat, and taste great with a cup of hot cocoa! It has been so cold here that I find muffins and a hot drink very comforting.

Gluten Free Morning Glory Muffins

  • 2/3 c. canola oil
  • 1/2 c. evaporated cane sugar
  • 1/4 c. natural brown sugar (I always seem to add another 1/8 cup in...I like it sweet!)
  • 1 tsp gluten-free vanilla extract
  • 3 eggs
  • 1 c. quinoa flour
  • 1/2 c. potato starch
  • 1/2 c. tapioca starch
  • 2 tsps baking soda
  • 2 tsps ground cinnamon  (I always sprinkle more in)
  • 2 tsps. xanthan gum
  • 1/2 tsp. salt
  • 1 c. grated carrots
  • 1 c. grated zucchini
  • 1/4 c. chopped toasted walnuts  (I don't like as many nuts, if you are crazy for nuts add 1/2 c.)
  • 1/2 c. seedless raisins
  • 1/4 c. toasted coconut flakes
  • 1 tsp. grated orange zest
  • 1 tart red apple, unpeeled, cored, and finely chopped

Apple peeler! They are so nice and make peeling and decoring such an easy process. I suggest everyone get one


  1. Preheat oven to 350°F.
  2. Put oil, cane sugar, brown sugar, vanilla and eggs into a large bowl and whisk by hand for about 1 minute to incorporate air into the mixture.
  3. Put flour, potato starch, tapioca starch, baking soda, cinnamon, xanthan gum, and salt into a second large bowl and stir well.
    1. Add flour mixture, carrots, zucchini, walnuts, raisins, coconut, orange zest, and apples to the reserved sugar mixture and stir well to form a batter.
  4. Scoop batter into 12 paper-lined muffin tins
  5. Bake until cooked through, about 25 minutes.

Gluten Free Strawberry Crepes

I apologize for not being on Blogger for so long. I had surgery, then college and work started...and I just haven't had time to update!

On the day of my surgery, I could not sleep at all. I had to leave for the hospital around 5:30am, and there I was puttering around the kitchen wondering what I could make. I couldn't eat it of course--surgeries have this crazy rule of no eating 8 hours before, but I thought I could treat my mom to a nice breakfast.

 Gluten Free Strawberry Cream Cheese Crepes

Servings: 4 crepes

  • 2/3 cup gluten free flour mix (either store bought, or you can use this one--look under ingredients)
  • 1/4 tsp. white sugar
  • 1/4 tsp. brown sugar
  • 1/8 tsp. salt
  • 2/3 cup milk
  • 1 egg
  • sprinkle of cinnamon
  • 1/4 tsp. vanilla
  1. Combine flour, sugar, salt, cinnamon in a bowl
  2. Make a well in the center of the flour and add milk, vanilla, and egg. Beat well to combine. It should have a smooth consistency
  3. Heat a lightly oiled frying pan over med-high heat and pour batter into it. I used approximately 1/4 cup of mixture for each crepe--remember, you want them somewhat thin!
  4. Cook crepe for about 2 minutes, until bottom is light brown. Loosen it up, turn it over and cook other side.
I made up the filling as I went along, so the measurements of things will be an estimate.

  • 1/2 cup strawberries slices
  • 1 teaspoon white sugar
  • 1/2 cup cream cheese
  • 1/2 confectioners sugar
  • a dash of lemon juice
  • 1/4 teaspoon vanilla
  • 1/8 cup milk
  1. Melt down cream cheese.
  2. Add milk, vanilla, sugar and lemon juice in a bowl.
  3. Stir in the cream cheese.
  4. Spread on finished crepe and add strawberries

Egglicious Salad Sandwich

I have been craving a tuna fish sandwich lately, but when I went to my pantry today to grab a can of tuna, I was dismayed to see I did not have any! I paused, racking my brain for a close second to tuna. Seeing a bottle of mustard I thought Egg Salad!

I quickly grabbed some eggs and boiled them and other ingredients into a bowl. I didn't measure anything and I just guessed about what I thought would taste good. I will try to give measurements on what I think will be sufficient.

4 boiled eggs
1/4 c. Mayonaise (I used Helmans Light)
1/8 c. (2 tbsp) Mustard
dash of Salt
dash of pepper Pepper
about 1/2 tsp Dill Weed (or to taste)
about 1/2 tsp Paprika (or to taste)
2 sliced Tomatoes
Sliced and toasted gluten free bread
butter (if desired)

After boiling eggs and peeling off shell, mash with a fork in a bowl (I like mine finely mashed)
Add in the mustard and the mayo and stir
Sprinkle in Salt and pepper and stir again
Taste it! See if it needs any more of the above 4 ingredients
Add in Dill weed.
Taste it! See if it needs more dill weed. If you added too much, just add in a little more mayo and/or mustard
Add Paprika and taste. If you added too much, just add in a little more mayo and/or mustard
Toast your bread. While toasting, slice tomatoes.
Butter your toast, if desired and Spread your yummy egg mixture onto warm toast.

Pass the Milk Please!

I love milk. I love drinking it. I love putting it in my cereal. I love putting hot coco mix in it. I love the taste, the smoothness and how well it goes with most meals.

Good thing that milk carries so many health benefits! Most diets these days say to minimize milk and dairy product intake but please do not !

Milk helps strengthen your bones and immune system as well as providing nutrients to your skin. It helps prevent hypertension, dental decay (strenghtens enamel of teeth), hydration, respiratory problems, obesity, and osteoporosis.

By drinking just one, 8oz. glass of milk we are giving our bodies a nice source of nutrients such as vitamin A, vitamin B, calcium, carbohydrates, phosphorous, magnesium, protein, zinc and riboflavin.

In fact, people who consume milk and other dairy products tend to not gain excess weight. Drinking a glass of milk after working out actually helps to burn fat! A study performed at Purdue University discovered that young, normal weight women who had approximately 1,000mg of calcium (about 1.5 pints of semi-skimmed milk) lost about 6 pounds over 2 years. That means, from drinking milk alone (no other dietary or exercise changes) these women lost weight! Think how much more weight you could lose if you combined exercise with a healthy diet that included milk!

Simply taking calcium supplements is beneficial, but actual dairy products prove more advantageous. Another study, led by Dr. Michael Zemel, observed and analyzed the diets of 32 obese adults. Through the study, he discovered that those of the adults who ate 3 servings of low-fat dairy products a day lost more than 10% of their body weight, while those who took calcium supplemts lost only 6% of their body weight.

So what are you waiting for? Drink up!

Falling for Fall Trends

I was at Forever 21 the other day just perusing looking for a jacket, when I noticed a necklace. Unsure if I liked it, I decided to carry it around and make a decision later about buying. As I was walking around the necklace must have caught on to something because all of a suddent I found myself being jerked backwards. Caught off balance I began to fall...right into the coat rack! But that was when I saw it: the perfect coat--a deep turquoise leather with a semi-bunched bottom. Sitting on the floor my legs unashamedly outwards in a V, and coats scattered all around me, I held up the jacket admiring it's style. Immediately I fell in love with it. After righting myself (and the fallen coats), I picked up the necklace and decided to buy it. It had, afterall, led me to my new favorite jacket for this fall.

I love shopping for fall clothes. It is the start of a new school year, which means new adventures and of course new trends. So I have compiled a short list and descriptions of the hottest fall trends for you to keep in mind when you go fall shopping.

The 50s are Back
Show off an hourglass figure with high waisted skirts and pants and waistbelts. Top of your outfit with neck scarves, a pretty pattern and a sweater or jacket.
